This recipe is popular in most regions in Luzon. Ideal dish soup during rainy season.
3 cloves garlic, crushed
1 onion, sliced
1 chicken, cut in serving pieces
1 medium upo (gourd), sliced in pieces
6 - 7 cups rice water
Salt to taste
Sauté the garlic and onion in a cooking pot, then drop the chicken. When chicken turns brown on all sides, pinch with salt to taste. Stir once in a while so the chicken to absorb the seasoning.
Add the rice water to cover the chicken. Let it boil until the chicken is tender. Drop the upo and cook until done. Balance seasoning with fish sauce according to taste. Enjoy!
